Ingredients

Scale
  • ¼ cup soy sauce (low-sodium if preferred)
  • 2 tablespoons mirin
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water
  • 7 ounces dried udon noodles
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 green onions, sliced (white and green parts separated)
  • 1 tablespoon sesame seeds (for garnish)
  • 1 tablespoon vegetable oil

Instructions

  1. Make the teriyaki sauce: In a small bowl, whisk together soy sauce, mirin, honey, rice vinegar, minced garlic, and grated ginger. Set aside.
  2. Prep vegetables: Wash and chop broccoli into small florets. Thinly slice red bell pepper. Julienne carrot. Slice green onions, keeping white and green parts separate.
  3. Heat 1 tablespoon vegetable oil in a large pot over medium-high heat. Add the white parts of the green onions and cook for about 30 seconds until fragrant.
  4. Add broccoli, bell pepper, and carrot. Stir-fry for 2-3 minutes until broccoli turns bright green and peppers soften slightly.
  5. Pour in the teriyaki sauce and add 2 cups of water. Bring to a boil. Add dried udon noodles, breaking them apart if stuck. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally.
  6. In a small bowl, mix cornstarch with 2 tablespoons cold water until smooth. Uncover the pot and pour in the cornstarch slurry while stirring. Cook for 1-2 minutes until sauce thickens and coats the noodles.
  7. Turn off heat. Drizzle with sesame oil and toss gently. Garnish with green parts of scallions and sesame seeds. Serve immediately.

Notes

If noodles look dry after cooking, add a splash of hot water or extra soy sauce. The sauce will continue to thicken as it cools. For best results, don’t overcook the noodles—check at 8 minutes. Toast sesame seeds in a dry pan for 1 minute for extra flavor. Leftovers keep in the fridge for up to 3 days; reheat in a skillet with a splash of water.
