Light, crispy, and healthy coconut flour waffles that are gluten-free, low-carb, and perfect for a quick breakfast. Ready in under 20 minutes with simple ingredients.

  • ½ cup coconut flour, sifted
  • 4 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted
  • ¼ cup milk of choice (whole milk, almond milk, etc.)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your waffle iron to medium-high heat (about 375°F) and let it heat for at least 5 minutes.
  2. In a medium bowl, sift together the coconut flour, baking powder, and salt.
  3. In a separate bowl, whisk the eggs until light and frothy, about 30 seconds. Add the melted butter (cooled slightly), milk, honey or maple syrup, and vanilla extract. Whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently with a rubber spatula or whisk until no dry streaks remain. The batter will be thick like a paste.
  5. Let the batter rest for 3-5 minutes to allow the coconut flour to absorb the liquid. If it becomes too thick, add a tablespoon of milk and stir.
  6. Lightly grease the preheated waffle iron with melted butter or non-stick spray.
  7. Scoop about ⅓ cup of batter onto the center of the waffle iron. Spread slightly with a spatula, close the lid, and cook for 4-5 minutes until golden brown and crispy. Do not open the lid too early.
  8. Place cooked waffles on a wire rack set over a baking sheet in a 200°F oven to keep warm and crispy. Do not stack them.
  9. Serve immediately with your favorite toppings.

Notes

For extra crispiness, place cooked waffles directly on the oven rack in a 300°F oven for 2-3 minutes. These waffles freeze well; cool completely, freeze in a single layer, then store in a zip-top bag for up to 3 months. Reheat in a toaster or toaster oven.
