  • 1 cup white chocolate chips or melting wafers (170g)
  • 1 1/2 cups powdered sugar (190g)
  • 3 tablespoons powdered lemonade drink mix (about 25g)
  • 1/4 cup unsalted butter (55g), melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place 9 cups (about 250g) of Chex cereal into a large mixing bowl.
  2. In a microwave-safe bowl, combine 1 cup (170g) white chocolate chips and 1/4 cup (55g) unsalted butter. Microwave in 30-second intervals, stirring well between each until smooth and fully melted (about 1-2 minutes total). Alternatively, use a double boiler to melt slowly over simmering water. Stir in 1 teaspoon vanilla extract and a pinch of salt once melted.
  3. Pour the melted white chocolate mixture over the cereal. Use a spatula or wooden spoon to gently fold the cereal so every piece gets a nice, even coating.
  4. In a large resealable plastic bag, combine 1 1/2 cups (190g) powdered sugar with 3 tablespoons (about 25g) powdered lemonade drink mix. Shake the bag to mix thoroughly.
  5. Transfer the coated cereal into the bag with the powdered sugar-lemonade mix. Seal tightly and shake vigorously until every piece is coated with the zesty powder.
  6. Pour the coated puppy chow onto a baking sheet or large tray lined with parchment paper. Spread it out evenly and let it cool and set for about 15 minutes at room temperature.
  7. Once cooled, transfer the snack to an airtight container. It’s ready to enjoy immediately but keeps well for up to a week.

Notes

Melt white chocolate slowly to avoid graininess. Shake powdered sugar and lemonade mix well before coating. Let puppy chow cool to set coating. Avoid over-stirring to keep crunch. For dairy-free, use coconut oil and dairy-free white chocolate. Add poppy seeds or lemon zest for extra flavor. Store in airtight container at room temperature for up to a week.
