  • 2 chipotle peppers in adobo
  • 1 tablespoon adobo sauce
  • 1 tablespoon fresh lime juice
  • 1 small garlic clove, minced
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon honey
  • Salt to taste

Instructions

  1. Remove 2 chipotle peppers from the can along with about 1 tablespoon of the adobo sauce. Remove seeds if you prefer milder heat.
  2. Place the chipotle peppers and adobo sauce into a food processor or blender. Pulse until smooth and thick, about 1-2 minutes.
  3. Transfer the chipotle paste to a mixing bowl. Add 1 cup mayonnaise, 1 tablespoon fresh lime juice, 1 teaspoon honey, 1 minced garlic clove, 1/2 teaspoon smoked paprika, and a pinch of salt.
  4. Stir everything together with a spoon or rubber spatula until smooth and evenly combined. Taste and adjust salt or lime juice as needed.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld and the sauce thicken slightly.
  6. Use as a spread on sandwiches, burgers, or as a dip for fries and vegetables. Keep refrigerated for up to one week.

Notes

Use fresh lime juice for best flavor. Remove seeds from chipotle peppers for less heat. Chill mayo for at least 30 minutes before serving to develop flavor.
