Savory Peach BBQ Chicken Bake: Easy Sticky Caramelized Dinner

This one-dish wonder features tender, juicy chicken thighs baked in a sweet and smoky peach BBQ sauce until sticky and caramelized. It’s an easy, crowd-pleasing dinner that comes together in under an hour with minimal cleanup.

  • 2 pounds (about 68 pieces) bone-in, skin-on chicken thighs
  • 3 medium ripe peaches (about 450g), pitted and sliced into wedges
  • 1 cup (240ml) smoky BBQ sauce (e.g., Sweet Baby Ray’s)
  • 1/4 cup (60ml) ketchup
  • 2 tablespoons (25g) packed brown sugar
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 tablespoon (15ml) Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon (15ml) olive oil
  • Fresh thyme or rosemary sprigs for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels. Season generously on all sides with salt, black pepper, and smoked paprika.
  2. In a medium bowl, whisk together BBQ sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, and minced garlic. Taste and adjust sweetness or tanginess as desired.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for 4-5 minutes until deep golden brown and crispy. Flip and cook for another 2 minutes. Work in batches if needed.
  4. Arrange seared chicken thighs skin-side up in a 9×13-inch baking dish. Tuck peach wedges around and between the chicken pieces. Pour the prepared BBQ sauce mixture evenly over everything, ensuring chicken and peaches are well coated.
  5. Bake uncovered for 35-45 minutes, until the sauce is thick and sticky, the chicken reaches an internal temperature of 165°F (74°C), and the peaches are soft and jammy. If the sauce darkens too quickly, loosely tent with foil for the last 10 minutes.
  6. Remove from oven and let rest for 5 minutes. Spoon sticky pan sauce over chicken and peaches before serving. Garnish with fresh thyme or rosemary if desired.

Notes

For extra sticky caramelization, broil for the last 2-3 minutes, watching closely to prevent burning. If using frozen peaches, add them frozen and increase baking time by 5-10 minutes. For boneless, skinless chicken thighs, reduce cooking time by 10-15 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
