Savory Hawaiian brown gravy - featured image

This savory Hawaiian brown gravy is rich, deeply flavorful, and comes together in under ten minutes. The combination of soy sauce and ginger gives it that unmistakable island soul that standard gravy just cannot touch.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups (480 ml) beef broth, low-sodium recommended
  • 2 tablespoons soy sauce (e.g., Kikkoman)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon Worcestershire sauce (optional)

Instructions

  1. Melt the butter: Place a medium saucepan over medium heat. Add 3 tablespoons unsalted butter and let it melt completely, swirling occasionally. Do not let it brown or burn.
  2. Make the roux: Sprinkle in 3 tablespoons all-purpose flour and immediately whisk into a smooth, golden paste. Cook for 1-2 minutes until slightly nutty but not browned.
  3. Add the aromatics: Add 2 minced garlic cloves and 1 teaspoon grated fresh ginger. Whisk constantly for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Pour in the broth: Slowly pour in 2 cups beef broth while whisking continuously to prevent lumps. Whisk until smooth and bubbling.
  5. Season the gravy: Add 2 tablespoons soy sauce, 1 teaspoon onion powder, 1/2 teaspoon black pepper, and optional 1 teaspoon Worcestershire sauce. Whisk to combine.
  6. Simmer and thicken: Bring to a gentle simmer and cook for 3-5 minutes, whisking occasionally, until thickened and glossy. It should coat the back of a spoon.
  7. Taste and adjust: Adjust seasoning as needed. Add a pinch of brown sugar for sweetness or more soy sauce for savory depth.
  8. Serve immediately: Remove from heat and serve hot. Gravy will continue to thicken slightly as it cools.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend or a cornstarch slurry (2 tablespoons cornstarch mixed with 1/4 cup cold water). For a vegetarian version, swap beef broth for vegetable or mushroom broth. Fresh ginger is highly recommended over ground for best flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat gently with a splash of broth.
