A unique and delicious pizza that combines sweet, juicy peaches with tangy goat cheese and fresh pesto for a perfect sweet-savory balance. It’s a quick and impressive summer meal that comes together in under 30 minutes.

Ingredients

Scale
  • 1 lb pizza dough
  • 1/3 cup basil pesto
  • 2 large fresh Georgia peaches, sliced into thin wedges
  • 4 oz goat cheese, crumbled
  • 1 cup shredded low-moisture mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • Balsamic glaze, for drizzling
  • Red pepper flakes (optional)
  • Fresh basil leaves, for garnish
  • Olive oil, for brushing
  • Cornmeal, for dusting

Instructions

  1. Preheat your oven to 475°F (245°C). Place the oven rack in the lowest position. Line a baking sheet with parchment paper and sprinkle with cornmeal.
  2. Let the pizza dough sit at room temperature for 30 minutes. On a lightly floured surface, stretch the dough into a 12-inch round or oval shape. Transfer to the prepared baking sheet.
  3. For a crispier crust, par-bake the dough for 5 minutes. Poke a few holes with a fork to prevent bubbles.
  4. Brush the crust with olive oil. Spread the pesto evenly, leaving a 1-inch border. Sprinkle mozzarella over the pesto. Arrange peach slices, crumbled goat cheese, and red onion on top.
  5. Bake on the lowest rack for 12-15 minutes, until the crust is golden and the cheese is bubbly.
  6. Let the pizza cool for 2 minutes. Drizzle with balsamic glaze, sprinkle with red pepper flakes (if using), and garnish with fresh basil. Slice and serve.

Notes

Pat peach slices dry with a paper towel to prevent sogginess. Par-baking the crust is recommended for extra crispiness. Use the lowest oven rack for best results. Leftovers can be stored in the refrigerator for up to 2 days and reheated in a skillet or oven at 350°F for 5-7 minutes.
