  • 3 cups (360 g) all-purpose flour
  • 2 ¼ tsp active dry yeast (one packet)
  • 1 ¼ cups (300 ml) warm water (about 110°F / 43°C)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil
  • ½ cup (120 ml) beef broth (or vegetable broth for vegetarian option)
  • 3 medium yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and black pepper to taste
  • 1 cup (100 g) shredded Gruyère cheese
  • ¼ cup (25 g) finely grated Parmesan cheese
  • ½ cup (30 g) panko breadcrumbs

Instructions

  1. Activate the yeast: In a small bowl, mix warm water with sugar and sprinkle yeast over the top. Let sit for 5–7 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour and salt. Pour in yeast mixture, beef broth, and olive oil. Stir until a shaggy dough forms.
  3. Knead the dough: On a floured surface, knead for 8–10 minutes until smooth and elastic, or use a stand mixer with dough hook for 6–7 minutes.
  4. First rise: Place dough in an oiled bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Caramelize the onions: Melt butter in a skillet over medium heat. Add onions and salt, cook slowly for about 30 minutes until golden and soft. Stir in garlic and thyme during last 5 minutes. Remove from heat.
  6. Preheat oven to 400°F (200°C). Lightly oil cast iron skillet if using.
  7. Shape the dough: Punch down dough and shape into a round or oval loaf to fit skillet or baking sheet.
  8. Assemble the bread: Spread caramelized onions evenly over dough. Mix Gruyère, Parmesan, and panko breadcrumbs and sprinkle over onions.
  9. Bake: Place skillet or baking sheet in oven and bake for 25–30 minutes until crust is golden and cheese topping is bubbly and browned.
  10. Cool and serve: Transfer bread to a cooling rack for 10 minutes before slicing to keep crust crisp.

Notes

Caramelize onions slowly for best flavor. Use a mix of Gruyère and Parmesan for a balanced crispy cheese crust. Let bread cool on a rack to keep crust crisp. Tent with foil if cheese browns too fast. Can refrigerate dough overnight after first rise. Avoid microwaving leftovers to keep crust crispy.
