  • 1 cup (240 ml) cold sparkling water or club soda
  • 1/4 cup (60 ml) heavy cream or half-and-half (can substitute coconut cream for dairy-free)
  • 2 tablespoons granulated sugar (adjust to taste; can substitute honey or agave nectar)
  • 1 teaspoon fresh lime juice
  • Ice cubes
  • Optional: 1/4 teaspoon vanilla extract
  • Optional: pinch of sea salt

Instructions

  1. Chill all your ingredients in the refrigerator for at least 30 minutes.
  2. In a bowl or large glass, whisk 2 tablespoons of sugar with 1/4 cup (60 ml) of heavy cream until the sugar dissolves and the mixture is smooth, about 2-3 minutes.
  3. Stir in 1 teaspoon of fresh lime juice to the cream mixture.
  4. Pour 1 cup (240 ml) of pineapple juice into the cream mixture and stir gently to blend, creating a creamy, slightly frothy texture.
  5. Fill serving glasses halfway with ice cubes.
  6. Slowly add 1 cup (240 ml) of sparkling water or club soda to the pineapple-cream mixture and stir gently once to combine without losing carbonation.
  7. Pour the creamy pineapple soda over the ice in glasses and serve immediately.
  8. Optional: Garnish with a wedge of fresh pineapple or a sprig of mint.
