Instructions

  1. Trim and wash green beans. Snap or cut off the stem ends, then pat dry.
  2. Thinly slice 4 cloves of garlic.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat for 1-2 minutes until shimmering but not smoking.
  4. Add the sliced garlic to the hot oil. Stir constantly for about 30 seconds to 1 minute until fragrant and lightly golden.
  5. Add the green beans, stirring quickly to coat with oil and garlic. Cook, stirring occasionally, for about 5-6 minutes until tender-crisp with slight charring.
  6. Drizzle 2 tablespoons chili oil and 1 tablespoon soy sauce over the beans. Stir well to distribute flavors evenly.
  7. Sprinkle 1 teaspoon toasted sesame seeds and add salt and pepper to taste. If using, add 1 teaspoon fresh lime juice or rice vinegar.
  8. Serve immediately while hot for maximum crunch and flavor.

Notes

Use medium-high heat to get a good sizzle without burning the garlic. Cook in batches if needed to avoid overcrowding the pan and keep beans crisp.
