  • 1 pound fresh green beans, trimmed
  • 4 large garlic cloves, thinly sliced or minced
  • 1 to 1.5 teaspoons red chili flakes
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon fresh lemon juice (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse 1 pound of fresh green beans and trim the ends. Pat dry thoroughly to prevent splattering during cooking.
  2. Heat a large skillet or wok over medium-high heat and add 2 tablespoons of olive oil. Heat until shimmering but not smoking, about 1-2 minutes.
  3. Add the thinly sliced garlic and sauté, stirring constantly, for about 30 seconds until fragrant and just starting to turn golden. Watch carefully to avoid burning.
  4. Sprinkle in 1 to 1.5 teaspoons of red chili flakes and stir quickly to combine with the garlic and oil. Adjust the amount based on your heat preference.
  5. Add the trimmed green beans to the pan. Stir frequently with tongs or a spatula to coat evenly in the garlic-chili oil. Cook for 5-6 minutes until tender-crisp with slight charred spots.
  6. Pour in 1 tablespoon of soy sauce and stir to combine. Season with salt and freshly ground black pepper to taste. Continue stirring to cook evenly.
  7. Just before removing from heat, squeeze about 1 teaspoon of fresh lemon juice over the beans to add brightness.
  8. Transfer to a serving dish immediately to preserve the crisp texture.

Notes

Do not overcrowd the pan to maintain high heat and achieve a good sear. Dry green beans thoroughly to prevent oil splatter. Thinly slice garlic to avoid burning. Adjust chili flakes to taste. If beans stick or pan gets dry, splash a little water or broth and cover briefly to steam lightly.
