  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (30g) Rice Krispies cereal

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together with an electric mixer on medium speed for 2-3 minutes until light, fluffy, and pale.
  3. Add the egg and vanilla, beating on low until just combined. The mixture may look slightly curdled; that’s fine.
  4. In a small bowl, whisk together the flour, baking soda, and salt.
  5. Add the flour mixture to the butter mixture and mix on low speed until just combined, with a few streaks of flour remaining.
  6. Gently fold in the chocolate chips with a rubber spatula until evenly distributed.
  7. Gently fold in the Rice Krispies cereal, using a light hand to keep the cereal mostly intact.
  8. Scoop the dough into 1.5-tablespoon balls (about the size of a walnut) and place them 2 inches apart on the prepared baking sheet. Do not flatten.
  9. Bake for 10-12 minutes, until the edges are golden brown and the centers look slightly puffy and underdone.
  10. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use room temperature ingredients. If dough is too sticky, chill for 10 minutes. Store in an airtight container at room temperature for up to 5 days. Add a slice of bread to the container to keep the cereal crunchy. Freeze baked cookies for up to 3 months.
