This Quick Garlic Miso Chicken is a weeknight lifesaver—juicy, caramelized chicken thighs coated in a savory miso-garlic glaze, all cooked in the air fryer in just 25 minutes. It’s an easy, flavorful dinner that feels like a cheat code for busy nights.

Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 3 tablespoons white miso paste
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Optional garnishes: sliced green onions, toasted sesame seeds, sriracha

Instructions

  1. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  2. In a medium mixing bowl, combine 3 tablespoons white miso paste, 4 minced garlic cloves, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil. Whisk until smooth.
  3. Pat the chicken thighs dry with paper towels. Add them to the bowl and toss until evenly coated.
  4. Arrange the chicken thighs in a single layer in the air fryer basket, ensuring they are not touching or overlapping.
  5. Air fry at 375°F (190°C) for 12 minutes.
  6. Flip the chicken using tongs and continue air frying for another 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the air fryer and let it rest for 2 minutes. Slice against the grain if desired, then garnish with sliced green onions and toasted sesame seeds.

Notes

The marinade can be made up to 3 days in advance and stored in the fridge. For a spicier version, add 1-2 teaspoons sriracha or gochujang paste. If using chicken breasts, reduce cooking time to 10-12 minutes total. To prevent burning, ensure the air fryer temperature is not too high; if it runs hot, reduce to 360°F (182°C).
