  • 1 cup Greek yogurt (plain or vanilla, full-fat or 2%)
  • 1 tablespoon brown sugar (packed, optional)
  • ½ teaspoon cinnamon (optional)
  • 1 teaspoon honey or maple syrup (for drizzling, optional)
  • Pinch of salt

Instructions

  1. Slice the bananas into rounds about ½-inch thick.
  2. Heat a non-stick skillet over medium heat and add the butter. Let it melt completely, swirling to coat the bottom.
  3. Lay the banana slices in a single layer in the pan. Do not overcrowd; cook in batches if needed.
  4. Sprinkle the brown sugar and cinnamon (if using) evenly over the bananas. Cook undisturbed for about 2 minutes, until edges turn golden and sugar bubbles.
  5. Gently flip each slice with a spatula and cook for another 1-2 minutes on the other side, until golden-brown and caramelized.
  6. Remove the pan from heat immediately.
  7. Spoon the Greek yogurt into a bowl. Top with the warm caramelized bananas and any syrup from the pan. Drizzle with honey or maple syrup if desired, and add a tiny pinch of salt.
  8. Eat immediately for the best contrast of warm bananas and cold yogurt.

Notes

Use ripe but firm bananas for best caramelization. Do not walk away from the pan; bananas can burn quickly. For extra syrup, add a splash of water or orange juice to the pan after removing bananas and swirl to loosen caramel. This recipe is best eaten fresh and does not store well.
