  • 1/4 cup brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon melted butter
  • 1 tablespoon granulated sugar mixed with 1/2 teaspoon cinnamon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Make the pumpkin filling: In a small bowl, whisk together the pumpkin puree, brown sugar, egg yolk, pumpkin pie spice, vanilla extract, and salt until smooth and well combined.
  3. Prepare the puff pastry: Lightly flour your work surface and unfold the thawed puff pastry sheet. Gently roll it out into a rectangle about 10×12 inches and 1/8 inch thick.
  4. Cut the pastry in half lengthwise so you have two long rectangles, each about 5×12 inches.
  5. Spread the pumpkin filling evenly over one half of the pastry, leaving a 1/2-inch border around all edges.
  6. Place the second rectangle of puff pastry on top of the filling. Press gently around the edges to seal.
  7. Using a pizza cutter or sharp knife, slice the pastry crosswise into 1-inch wide strips (about 10 to 12 strips).
  8. Take each strip, hold both ends, and gently twist in opposite directions. Place each twisted strip onto the prepared baking sheet, leaving about an inch of space between them.
  9. Brush each twist with melted butter, then generously sprinkle the cinnamon sugar mixture over the top.
  10. Bake for 12 to 15 minutes, until golden brown and puffed up. Let cool on the baking sheet for about 5 minutes.
  11. Dust with powdered sugar right before serving, if desired.

Notes

Keep puff pastry cold for best flakiness. Don’t overfill the twists. Use a pizza cutter for clean cuts. Start checking at 12 minutes to avoid overbaking. For make-ahead, bake fully, cool, store in airtight container, and reheat at 350°F for 5 minutes.
