  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs (room temperature)
  • 1/3 cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 (20-ounce/567g) can crushed pineapple in juice (do not drain completely; leave about 23 tablespoons juice)
  • 1/2 cup (40g) sweetened shredded coconut (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate medium bowl, whisk together the eggs, vegetable oil, vanilla extract, and the crushed pineapple with about 2-3 tablespoons of its juice.
  4. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  5. If using, gently fold in the shredded coconut.
  6. Divide the batter evenly among the 12 muffin cups, filling them almost to the top.
  7. Bake on the middle rack for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and spring back when touched.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid tough muffins. Use room temperature eggs for best results. The pineapple juice is key for moisture—do not drain the can completely. For a vegan version, replace eggs with flax eggs. For gluten-free, use a 1:1 gluten-free baking blend. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
