This easy homemade cheese bread features sweet roasted garlic, gooey mozzarella, and a golden buttery crust. Perfect for parties, game day, or any occasion, it’s a crowd-pleaser that comes together with simple ingredients and minimal effort.

Ingredients

Scale
  • 3 whole heads of garlic
  • 1 tablespoon olive oil
  • Pinch of salt and black pepper
  • 1 large loaf of sourdough bread (about 16 ounces)
  • 8 tablespoons (1 stick) unsalted butter, softened to room temperature
  • 2 cups shredded low-moisture mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (plus more for garnish)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF. Slice off the top quarter-inch of each garlic head to expose the cloves. Place each head on a piece of aluminum foil, drizzle with olive oil, and sprinkle with a pinch of salt and pepper. Wrap the foil tightly around each head and place them on a baking sheet. Roast for 35-40 minutes, until the cloves are soft and golden brown. Let them cool for about 10 minutes.
  2. While the garlic roasts, slice the sourdough loaf in a grid patternโ€”about 1-inch slices going one direction, then the same going the other. Cut almost all the way through the bread, leaving the bottom crust intact. Place the scored bread on a parchment-lined baking sheet.
  3. Once the garlic is cool enough to handle, squeeze the cloves out of their skins into a medium bowl. Mash them with a fork until you have a rough paste. Add the softened butter, garlic powder, red pepper flakes (if using), salt, and a few cracks of black pepper. Mix until well combined.
  4. Using a butter knife or small spatula, spread the roasted garlic butter generously between every slice of bread. Use all of it.
  5. In the same bowl, toss the shredded mozzarella and Parmesan together. Stuff the cheese mixture into all the cuts in the bread. Sprinkle any remaining cheese over the top of the loaf.
  6. Place the baking sheet in the oven and bake for 15-18 minutes, until the cheese is fully melted and starting to bubble. For an extra golden top, switch the oven to broil for the last 1-2 minutes. Watch closely.
  7. Remove from the oven and let it rest for 2-3 minutes. Sprinkle with fresh parsley and a little extra Parmesan if desired. Serve warm, pulling apart the slices as you go.

Notes

For best results, use low-moisture mozzarella (not fresh) to avoid sogginess. Roast garlic for a full 35-40 minutes until soft and sweet. Butter must be at room temperature for even mixing. Watch the broiler closely to prevent burning. Can be assembled up to 24 hours ahead and refrigerated; add 5-7 minutes to baking time. Freeze unbaked for up to 2 months.
