  • 2 cups fresh spinach, finely chopped (about 60 g)
  • ½ cup breadcrumbs (50 g), plain or seasoned
  • ¼ cup grated Parmesan cheese (25 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large egg, beaten
  • Salt and black pepper to taste
  • 8 small slider buns (soft brioche or classic white), lightly toasted
  • Olive oil or cooking spray for cooking
  • Optional toppings: sliced tomato, pickles, mayo, or mustard

Instructions

  1. Rinse 2 cups of fresh spinach thoroughly and pat dry with paper towels. Finely chop it so it blends well into the chicken mixture. If using frozen, thaw and squeeze out as much water as possible. (Prep time: 5 minutes)
  2. In a large bowl, combine 1 pound (450 g) of ground chicken, chopped spinach, ½ cup (50 g) breadcrumbs, ¼ cup (25 g) grated Parmesan, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 beaten large egg, and salt and pepper to taste. Mix gently until just combined — don’t overwork the meat. (Prep time: 5 minutes)
  3. Divide the mixture into 8 equal portions (about 2 oz or 60 g each). Shape each into a round slider-sized patty, about 2.5 inches (6 cm) in diameter and ½ inch (1.3 cm) thick. (Prep time: 5 minutes)
  4. Warm a non-stick skillet over medium heat and add a small drizzle of olive oil or spray with cooking spray to prevent sticking. (Cook time: 2 minutes)
  5. Place the patties on the skillet without crowding. Cook for about 4-5 minutes on the first side until the bottom is golden brown. Flip carefully and cook another 4-5 minutes until the internal temperature reaches 165°F (74°C) and the patties are cooked through. (Cook time: 10 minutes)
  6. While the sliders cook, slice and lightly toast the slider buns in a separate pan or toaster for a warm, slightly crispy texture. (Cook time: 3 minutes)
  7. Place each juicy chicken spinach patty on a toasted bun, add your favorite toppings like sliced tomato or pickles, and a smear of mayo or mustard if desired. Serve immediately for best flavor and texture.

Notes

Do not overmix the chicken to keep patties tender. Keep spinach dry to avoid soggy patties. Use medium heat to get a golden crust without burning. Check doneness with a thermometer (165°F/74°C). Toast buns just before serving to prevent sogginess. If patties are fragile, add more breadcrumbs or chill mixture before cooking. Avoid pressing patties while cooking to retain juiciness.
