A quick and easy garlic bread recipe featuring a crispy golden crust and a gooey, cheesy blend of mozzarella and sharp cheddar. Perfect as a comforting side or snack.

  • 1 large baguette or Italian bread loaf (about 12 inches/30 cm), preferably day-old
  • 1/2 cup (113g) unsalted butter, softened
  • 45 cloves garlic, finely minced or pressed
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) sharp cheddar cheese
  • Optional: 1/4 cup (25g) grated parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine softened butter, minced garlic, chopped parsley, salt, and freshly ground black pepper. Mix until smooth.
  3. Slice the baguette in half lengthwise to create two long halves. Optionally, slice each half into smaller sections for serving.
  4. Spread the garlic butter mixture evenly over the cut sides of the bread.
  5. Sprinkle the cheese blend evenly over the buttered bread: 1 cup mozzarella and 1/2 cup sharp cheddar. Add parmesan on top if using.
  6. Optionally, sprinkle red pepper flakes over the cheese for a subtle heat.
  7. Place the bread halves on a rimmed baking sheet, cheese side up. Bake for 12-15 minutes until cheese is melted and bubbly.
  8. Switch oven to broil and toast for an additional 1-3 minutes to achieve a crispy golden crust. Watch carefully to avoid burning.
  9. Remove from oven and let rest for 2-3 minutes to allow cheese to set.
  10. Garnish with extra chopped parsley if desired, slice, and serve warm.

Notes

Use day-old bread for best texture to avoid sogginess. Soften butter fully before mixing to ensure even garlic flavor. Watch the bread closely during broiling to prevent burning. Grate your own cheese for better melt and flavor. For a gluten-free or dairy-free version, substitute bread and butter/cheese accordingly.
