A quick and easy snack combining crispy buttery bread, melty cheese, sweet banana slices, and honey for a perfect sweet-savory treat.

  • 2 slices sandwich bread (white, whole wheat, or sourdough)
  • 1 ripe banana, sliced (about 1/4 inch thick)
  • 23 slices mozzarella or mild cheddar cheese
  • 1 tablespoon honey
  • 12 tablespoons unsalted butter, softened
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Slice the banana into thin, even rounds (about 1/4 inch thick). Sprinkle cinnamon or nutmeg on banana slices if using.
  2. Spread softened butter evenly on one side of each bread slice.
  3. Place one slice of bread, buttered side down, onto a skillet. Layer cheese evenly on the bread, then add banana slices on top.
  4. Drizzle honey over the banana, then top with remaining cheese slices.
  5. Place the second slice of bread on top, buttered side up.
  6. Cook on medium heat for 3-4 minutes until the bread is golden brown and crispy. Lower heat if bread browns too fast before cheese melts.
  7. Flip the sandwich carefully and cook the other side for another 3-4 minutes until golden and cheese is melted.
  8. Press lightly with spatula to check doneness. If cheese isn’t melted enough, lower heat and cover pan for 1-2 minutes.
  9. Remove from pan, let cool for a minute, slice diagonally, and serve immediately.

Notes

Use ripe but firm bananas to avoid sogginess. Cook on medium to low heat to ensure cheese melts without burning bread. Butter the bread well for a crispy crust. Refrigerate banana before slicing if too soft. For vegan version, use dairy-free cheese, vegan butter, and maple syrup instead of honey.
