Instructions

  1. Toast the quinoa: Place 1/2 cup of uncooked quinoa in a dry skillet over medium heat. Shake the pan occasionally and watch closely. After about 4-5 minutes, you’ll hear it start to pop and see it turn golden brown. Remove from heat and set aside to cool.
  2. Mix the base: In a large bowl, combine 1/2 cup creamy peanut butter and 1/3 cup honey (or maple syrup). Stir until smooth and well combined.
  3. Add the quinoa: Fold in the toasted quinoa until evenly distributed.
  4. Form the bites: Scoop out about 1 tablespoon of the mixture and roll into a ball between your palms. Place each ball on a parchment-lined baking sheet. You should get about 12-14 bites.
  5. Chill the bites: Refrigerate the baking sheet for at least 15-20 minutes to firm up.
  6. Melt the chocolate: In a small microwave-safe bowl, combine 1/2 cup dark chocolate chips and 1 tablespoon coconut oil. Microwave in 30-second bursts, stirring between each, until smooth and fully melted.
  7. Dip and drizzle: Remove the chilled bites from the fridge. Dip each one halfway into the melted chocolate, or drizzle the chocolate over the top with a spoon. Place them back on the parchment-lined sheet.
  8. Add a finishing touch: While the chocolate is still wet, sprinkle a pinch of flaky sea salt over each bite.
  9. Let them set: Return the baking sheet to the refrigerator for another 15-20 minutes, or until the chocolate is firm.
