Irresistible Chocolate Chip Banana Bars: Easy 30-Minute Recipe

These chocolate chip banana bars are soft, cake-like, and packed with gooey chocolate and sweet banana flavor. Made in one bowl in just 30 minutes, they’re the perfect quick dessert or snack that tastes like you tried really hard.

  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ½ cup unsalted butter, melted (113 grams)
  • ¾ cup granulated sugar (150 grams)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190 grams)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips (175 grams)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your 9×13 pan with parchment paper or grease it lightly with butter or nonstick spray.
  2. In your large mixing bowl, mash the bananas with a fork until they’re mostly smooth with a few small lumps. You want about 1 ½ cups of mashed banana.
  3. Pour in the melted butter and granulated sugar. Stir with your wooden spoon until everything is combined.
  4. Crack the egg into the bowl and add the vanilla extract. Stir until the egg is fully incorporated. The batter should look smooth and glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently until just combined. Do not overmix. A few streaks of flour are okay.
  6. Add the chocolate chips and fold them in with a few strokes. Reserve a handful of chips to sprinkle on top if you want a prettier presentation.
  7. Pour the batter into your prepared pan and spread it evenly with your spatula. Sprinkle the reserved chocolate chips on top.
  8. Bake for 22 to 25 minutes. The bars are done when the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool in the pan for 10 minutes. Transfer the pan to a cooling rack. After 10 minutes, lift the bars out using the parchment paper and let them cool completely on the rack.

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. Don’t overmix the batter to keep bars tender. Let bars cool completely before cutting for clean edges. Bars can be stored in an airtight container at room temperature for up to 4 days or frozen for up to 3 months. For a gluten-free version, use a 1:1 gluten-free baking flour blend. For a vegan version, use melted coconut oil or vegan butter and a flax egg.
