Healthy Fudgy Cassava Flour Brownies

These fudgy, gluten-free brownies are made with cassava flour for a smooth, buttery texture. Ready in 30 minutes, they’re naturally sweetened with coconut sugar and perfect for a quick, indulgent dessert.

  • ¾ cup cassava flour (spooned and leveled)
  • ½ cup unsweetened cocoa powder (Dutch-process preferred)
  • ¾ cup coconut sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ½ cup coconut oil, melted and cooled slightly
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup water or milk of choice (e.g., almond milk)
  • ½ cup dark chocolate chips (optional, dairy-free if needed)
  • Flaky sea salt for sprinkling (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease with coconut oil.
  2. In a large bowl, whisk together cassava flour, cocoa powder, coconut sugar, baking soda, and salt until no lumps remain.
  3. In a separate medium bowl, whisk together melted coconut oil, eggs, vanilla extract, and water or milk until smooth and emulsified.
  4. Pour wet mixture into dry ingredients. Stir with a rubber spatula until just combined. Batter will be thick and fudgy.
  5. If using, gently fold in dark chocolate chips, reserving a handful for topping.
  6. Scrape batter into prepared pan and spread evenly. Sprinkle reserved chocolate chips and flaky sea salt on top.
  7. Bake for 22-26 minutes, until edges are set and a toothpick inserted in center comes out with moist crumbs (not wet batter).
  8. Cool in pan on a wire rack for at least 30 minutes. Lift out using parchment and cool completely before cutting into 16 squares.

Notes

Don’t overbake; pull out when center is still soft. Use room temperature eggs to avoid lumpy batter. Measure cassava flour by spooning lightly into cup, not packing. For vegan version, use flax eggs (2 tbsp ground flaxseed + 6 tbsp water). Brownies taste even better the next day.
