Healthy Creamy High Protein Cottage Cheese Giardiniera Dip

A creamy, high-protein dip made with cottage cheese and tangy giardiniera, perfect for quick, healthy snacking with a spicy-sour kick.

  • 1 cup cottage cheese, drained (full-fat or low-fat, preferably small-curd)
  • 1/2 cup giardiniera, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley or chives, chopped (optional)

Instructions

  1. Drain the cottage cheese using a fine-mesh strainer or cheesecloth for about 5 minutes to remove excess liquid.
  2. Finely chop the giardiniera including pickled peppers, cauliflower, and carrots.
  3. In a food processor or blender, combine the drained cottage cheese, chopped giardiniera, minced garlic, lemon juice, and olive oil.
  4. Pulse the mixture until smooth but still slightly textured, about 30 seconds to 1 minute. Scrape down the sides if needed.
  5. Taste and season with salt and freshly ground black pepper. Add more lemon juice if desired for extra tang.
  6. Stir in chopped fresh parsley or chives if using.
  7. Transfer the dip to a serving bowl and chill for at least 30 minutes to let flavors meld and texture firm up.
  8. Serve chilled or at room temperature with crunchy veggies, pita chips, crackers, or alongside grilled meats.

Notes

Drain the cottage cheese well to avoid a runny dip. Pulse blend to keep some texture and avoid overblending which can make the dip gummy. Adjust salt after blending due to giardiniera’s saltiness. Chill at least 30 minutes for best flavor and texture. Loosen with a splash of water or milk if too thick after chilling.
