These Healthy Banana Quinoa Breakfast Bars are soft, naturally sweet, and made with just six simple ingredients. They’re perfect for meal prep, packed with protein and fiber, and taste even better the next day.

  • 3 large ripe bananas, mashed
  • 1 cup cooked quinoa, cooled
  • 1 ½ cups rolled oats
  • 1 large egg
  • ¼ cup milk (dairy, almond, oat, or soy)
  • 1 teaspoon vanilla extract
  • ¼ cup dark chocolate chips (optional)
  • ¼ cup chopped walnuts or pecans (optional)
  • 2 tablespoons chia seeds or flaxseeds (optional)
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until smooth with a few small lumps.
  3. Add the egg, milk, and vanilla extract to the bowl. Whisk until well combined.
  4. Fold in the cooked quinoa and rolled oats with a spatula until evenly coated. If using any optional add-ins, fold them in now.
  5. Let the batter rest for 5 minutes to allow the oats to absorb some liquid.
  6. Pour the batter into the prepared pan and spread evenly, pressing down gently into the corners.
  7. Bake for 22-28 minutes, until the edges are golden brown and the center feels firm. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then lift out using the parchment overhang and transfer to a wire rack. Cool completely before slicing (about 30 minutes).
  9. Slice into 9 even squares or 12 smaller rectangles using a sharp knife.

Notes

For vegan version, replace egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, rested for 5 minutes). Use plant-based milk. Let quinoa cool completely before mixing. Bars taste better the next day. Store in airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze individually for up to 3 months.
