  • 1.5 pounds boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • 2 green onions, thinly sliced (optional, for garnish)

Instructions

  1. Cut chicken thighs into 1.5-inch pieces.
  2. In a medium bowl, whisk together gochujang, soy sauce, honey, sesame oil, rice vinegar, minced garlic, grated ginger, and black pepper until thick but spreadable.
  3. Add chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, ideally 1–2 hours.
  4. If using bamboo skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread marinated chicken pieces onto skewers, leaving space between pieces for even cooking.
  6. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil grill pan if using.
  7. Grill skewers for 4–5 minutes per side, turning carefully with tongs until chicken is cooked through and has char marks. Internal temperature should reach 165°F.
  8. Remove skewers from heat and let rest for 5 minutes.
  9. Sprinkle with toasted sesame seeds and sliced green onions before serving.

Notes

Marinate chicken for at least 30 minutes for best flavor; 1–2 hours is ideal. Soak bamboo skewers for 30 minutes before grilling to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F. Rest skewers after cooking to lock in juices. For gluten-free, substitute soy sauce with tamari. For vegan variation, swap honey with maple syrup and use tofu instead of chicken.
