  • 1 cup (125g) all-purpose flour (or almond flour for a gluten-free twist)
  • 1/2 cup (45g) unsweetened cocoa powder (natural or Dutch-processed)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (170g) unsalted butter, melted (or coconut oil for dairy-free)
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature (or flax eggs for vegan: 1 tbsp ground flaxseed + 3 tbsp water per egg)
  • 1 teaspoon pure vanilla extract
  • 1/3 cup (40g) ube powder or 1 cup cooked, mashed ube (purple yam)
  • 1/2 cup (90g) semi-sweet chocolate chips (or dairy-free if preferred)
  • Optional toppings: powdered sugar, toasted coconut flakes, chopped macadamia nuts or pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Sift together 1 cup all-purpose flour, 1/2 cup cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon salt in a medium bowl.
  3. Melt 3/4 cup butter until just liquid and let it cool slightly.
  4. Add 1 cup granulated sugar to the melted butter and whisk until combined. Then whisk in 2 room-temperature eggs one at a time until glossy and smooth. Stir in 1 teaspoon vanilla extract.
  5. Stir in 1/3 cup ube powder or 1 cup mashed cooked ube until fully incorporated.
  6. Gradually fold in the sifted dry ingredients using a rubber spatula, being gentle to avoid overmixing.
  7. Fold in 1/2 cup chocolate chips gently.
  8. Pour the batter into the prepared pan and spread evenly. Tap the pan lightly to release air bubbles.
  9. Bake for 25-30 minutes, checking at 25 minutes with a toothpick; it should come out with a few moist crumbs but not wet batter.
  10. Cool the brownies completely in the pan on a wire rack for at least 1 hour.
  11. Use the parchment paper overhang to lift the brownies out, cut into 12 squares, and dust with powdered sugar or sprinkle toasted coconut if desired.

Notes

If using a glass pan, reduce oven temperature by 10°F (5°C) to prevent over-baking edges. Use room temperature eggs for better texture. Avoid overmixing after adding flour to keep brownies fudgy. Let brownies cool completely before cutting to prevent crumbling. For vegan version, substitute butter with coconut oil and eggs with flax eggs. Add a teaspoon of ube extract for more intense flavor. Cover with foil halfway through baking if top browns too quickly.
