A crisp, refreshing cucumber salad with a zesty sumac dressing, fresh herbs, and a bright lemony twist. Perfect for a quick, fuss-free side dish that adds vibrant flavor to any meal.

  • 2 large cucumbers, thinly sliced (English cucumbers preferred)
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sumac
  • 1 garlic clove, minced
  • Salt to taste
  • Freshly ground black pepper, a pinch

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a sharp knife or mandoline, slice the cucumbers into thin rounds about 1/8-inch (3 mm) thick. Place them in a large mixing bowl.
  2. Thinly slice the red onion into delicate slivers and add to the cucumbers.
  3. Finely chop the parsley and mint leaves (if using) and add to the bowl.
  4. In a small bowl, whisk together olive oil, fresh lemon juice, sumac, minced garlic, salt, and pepper until the dressing is vibrant and slightly oily with a reddish tint.
  5. Pour the dressing over the cucumber mixture and gently toss until well coated, being careful not to bruise the cucumbers.
  6. Allow the salad to rest for 5 minutes to let the flavors meld.
  7. Taste and adjust salt or lemon juice as needed. Serve immediately or chill for up to an hour before serving.

Notes

Use a mandoline slicer for even, thin cucumber slices. Toss the dressing into the salad rather than sprinkling sumac on top to evenly distribute flavor. Adjust garlic amount to taste to avoid overpowering the salad. Prepare just before serving for best texture. Store leftovers in an airtight container in the refrigerator for up to 24 hours; drain excess liquid and toss with fresh lemon juice before serving again.
