Fresh Pineapple Walnut Salad with Easy Honey-Lime Dressing

A quick and easy salad featuring sweet pineapple, crunchy walnuts, tangy lime, and creamy feta, all tossed in a honey-lime dressing. Perfect for a light lunch or a vibrant side dish.

  • 2 cups fresh pineapple, diced
  • 56 cups mixed salad greens (baby spinach and arugula recommended)
  • 1/2 cup walnuts, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • Optional: dried cranberries, sliced avocado, grilled chicken

Instructions

  1. Toast the walnuts: Heat a small skillet over medium heat. Add the chopped walnuts and cook for 2-3 minutes, stirring frequently, until fragrant. Transfer to a plate to cool completely.
  2. Make the dressing: In a small bowl or mason jar, combine the fresh lime juice, honey, olive oil, and a pinch of salt and pepper. Whisk or shake until well combined. Taste and adjust.
  3. Prepare the pineapple: If using a whole pineapple, cut off the top and bottom, slice off the skin, and remove the eyes. Cut into quarters, remove the core, and dice into bite-sized pieces. Aim for about 2 cups.
  4. Slice the red onion: Slice thinly. If sensitive to raw onion, soak slices in cold water for 10 minutes, then drain and pat dry.
  5. Assemble the salad: In a large mixing bowl, add the mixed greens, diced pineapple, toasted walnuts, sliced red onion, and crumbled feta cheese.
  6. Add the dressing: Drizzle the honey-lime dressing over the salad. Start with half and add more as needed.
  7. Toss gently: Use salad tongs or two large spoons to toss everything together gently.
  8. Serve immediately: This salad is best eaten right away while the greens are crisp and the walnuts are crunchy.

Notes

Toast walnuts for best flavor. Use ripe pineapple. Don’t overdress the salad. Prep ingredients ahead but assemble just before serving.
