Fresh Homemade Mint Chocolate Chip Greek Yogurt Pops

These easy and healthy summer treats combine creamy Greek yogurt with fresh mint and chocolate chips for a refreshing and satisfying frozen pop.

Ingredients

  • 2 cups (480 ml) plain Greek yogurt, full-fat or 2%
  • 1/4 cup packed fresh mint leaves, finely chopped
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (90 grams) mini chocolate chips, semi-sweet or dark
  • 1 teaspoon fresh lemon juice (optional)
  • Pinch of salt

Instructions

  1. Rinse and pat dry 1/4 cup fresh mint leaves. Roughly chop and add to blender or food processor.
  2. Add 2 cups Greek yogurt, 2 tablespoons honey or maple syrup, 1 teaspoon vanilla extract, 1 teaspoon fresh lemon juice (optional), and a pinch of salt to the blender with the mint. Pulse until mint is finely chopped and evenly mixed, about 30 seconds.
  3. Transfer yogurt mixture to a bowl and gently fold in 1/2 cup mini chocolate chips.
  4. Spoon mixture evenly into popsicle molds, filling about 3/4 full. Insert popsicle sticks.
  5. Freeze molds upright for at least 4-6 hours or overnight until firm.
  6. To unmold, run warm water briefly over the outside of molds and gently pull on sticks. Enjoy!

Notes

Use full-fat Greek yogurt for creamier texture. Fresh mint is preferred over extract for natural flavor and appearance. Stir mixture well before freezing to prevent icy texture. Pops can be stored in airtight container or freezer bag for up to 2 weeks. For dairy-free version, substitute Greek yogurt with coconut milk yogurt.
