  • 1/2 cup (120g) softened full-fat cream cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh dill, finely chopped
  • 1 small garlic clove, minced finely
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • Optional: thin cucumber slices
  • Optional: sprinkle of smoked paprika

Instructions

  1. Wash and dry bell peppers thoroughly. Slice into 1/4 inch thick strips or rings, removing seeds and membranes.
  2. In a medium bowl, add softened cream cheese. Finely chop parsley, chives, and dill. Mince garlic. Add herbs, garlic, lemon juice, salt, and pepper to cream cheese.
  3. Mix the spread with a spoon or spatula until smooth and well combined. For extra smoothness, pulse briefly in a food processor or blender.
  4. Toast two slices of bread lightly. Spread 2 tablespoons of the herb cream cheese on each slice, covering edges to avoid sogginess.
  5. Layer bell pepper slices evenly on one slice of bread. Add optional cucumber slices or smoked paprika if desired.
  6. Place the second slice of bread on top, spread side down. Cut sandwich diagonally and serve immediately or wrap for later.
