  • 3 tablespoons (36g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 4 full sheets graham crackers, crushed into crumbs (about ½ cup)
  • ½ cup (90g) semi-sweet chocolate chips (mix of mini and regular)
  • ½ cup (120ml) marshmallow crème
  • 68 large marshmallows (for topping)
  • Optional: extra graham cracker crumbs, melted chocolate, powdered sugar

Instructions

  1. Crush the graham crackers: Place 4 full sheets in a zip-top bag and crush with a rolling pin into a mix of fine crumbs and small chunks. Set aside.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Make the batter: Pour wet ingredients into dry ingredients and stir gently until just combined (a few lumps are fine). Fold in crushed graham crackers and chocolate chips. Let batter rest for 5 minutes.
  5. Heat the pan: Place a non-stick skillet or griddle over medium heat. Add a small pat of butter and swirl to coat.
  6. Cook the pancakes: Pour about ¼ cup of batter per pancake onto the hot griddle. Cook until bubbles form on the surface and edges look set (2-3 minutes). Flip and cook for another 1-2 minutes until golden brown and puffed.
  7. Keep warm: Transfer cooked pancakes to a plate and cover loosely with foil or keep in a 200°F oven.
  8. Assemble the stacks: Place one pancake on a serving plate, spread a generous tablespoon of marshmallow crème on top. Repeat with 2-3 more pancakes, ending with a dollop of marshmallow crème on top.
  9. Toast the marshmallows: Skewer a large marshmallow and hold over a gas burner, kitchen torch, or under the broiler for 15-30 seconds, rotating constantly, until golden brown and puffed.
  10. Finish and serve: Place toasted marshmallow on top of the pancake stack. Sprinkle with extra graham cracker crumbs and drizzle with melted chocolate if desired. Serve immediately.

Notes

Do not put marshmallows directly into the pancake batter; they melt into sticky puddles that burn on the griddle. Use marshmallow crème for the filling and toasted marshmallows for the topping. For best results, toast marshmallows at the last minute and serve immediately.
