  • ¼ cup freshly squeezed orange juice
  • ½ cup brown sugar, packed (light brown sugar preferred)
  • ¼ cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract (optional)
  • A pinch of salt

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly mixed.
  2. In a separate bowl, beat the egg lightly. Add milk, melted butter, orange zest, and orange juice. Whisk gently until combined.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. Let the batter rest for 5 minutes.
  4. Preheat a non-stick skillet or griddle to medium heat. Lightly butter the pan.
  5. Pour about ¼ cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until golden and cooked through. Repeat with remaining batter, buttering the skillet between batches as needed.
  6. While pancakes cook, melt butter in a small saucepan over medium heat. Stir in brown sugar and salt, cooking until sugar dissolves and mixture bubbles gently, about 3 minutes.
  7. Slowly whisk in heavy cream and vanilla extract. Cook for another 2 minutes until syrup thickens slightly, stirring constantly. Remove from heat and keep warm.
  8. Stack pancakes on plates and drizzle the creamy syrup generously over the top.

Do not overmix the batter; a few lumps are fine to keep pancakes fluffy. Let the batter rest for 5 minutes before cooking. Use fresh orange zest for best flavor.
