These fluffy Oreo pancakes combine the perfect balance of creamy, crunchy, and sweet for an irresistible weekend brunch treat. Simple to make with pantry staples and crushed Oreos, they bring a playful twist to classic pancakes.

  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1 ¼ cups (300ml) milk (whole or 2%)
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 10 Oreos, coarsely crushed (about 1 cup)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined. (5 minutes)
  2. In a separate bowl, beat the egg lightly, then whisk in the milk, melted butter, and vanilla extract until smooth. (3 minutes)
  3. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula just until combined; a few lumps are fine. Avoid overmixing. (2 minutes)
  4. Carefully fold in the coarsely crushed Oreos, distributing them evenly without breaking them too much. (1 minute)
  5. Preheat a non-stick skillet or griddle over medium heat. Test readiness by sprinkling a few drops of water on the surface; if they dance and evaporate, the pan is ready. Lightly grease if needed. (5 minutes)
  6. Pour about ¼ cup (60ml) batter per pancake onto the hot skillet. Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes. Flip gently and cook the other side for another 2 minutes or until golden brown and cooked through. (4-6 minutes per batch)
  7. Transfer cooked pancakes to a cooling rack or plate lined with paper towels to prevent sogginess. Keep warm in a low oven (200°F / 95°C) if desired.
  8. Serve immediately with your favorite syrup, whipped cream, powdered sugar, fresh fruit, or chocolate sauce.

Notes

Use freshly crushed Oreos to keep chunks distinct and avoid soggy batter. Do not overmix the batter to keep pancakes tender. Cook on medium heat and flip only when bubbles form fully. Rest batter for 5 minutes before cooking for extra fluffiness. If batter is too thick, add a splash of milk; if too thin, add a pinch of flour. Cook pancakes in batches to avoid overcrowding the pan.
