These fluffy chocolate oat pancakes are a quick and wholesome breakfast that comes together in just 15 minutes. Made with simple ingredients like rolled oats, banana, and cocoa powder, they’re a crowd-pleaser that tastes like a treat but feels nourishing.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 large ripe banana, mashed
  • 2 large eggs
  • 3 tablespoons (18g) unsweetened cocoa powder
  • 1/2 cup (120ml) milk (dairy or plant-based)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Coconut oil or butter (for the pan)

Instructions

  1. Add the rolled oats to your blender and pulse a few times until they turn into a fine powder, about 10 seconds.
  2. Add the ripe banana (broken into chunks), eggs, milk, cocoa powder, vanilla extract, baking powder, and a pinch of salt. If using honey or maple syrup, add it now. Blend on medium speed until the batter is completely smooth, about 20-30 seconds. Scrape down the sides if needed.
  3. Check the consistency. The batter should be thick but pourable—think Greek yogurt consistency. If it’s too thick, add another tablespoon of milk. If it’s too thin, let it rest for 2 minutes; the oats will absorb some liquid and thicken up.
  4. Place your skillet or griddle over medium heat and add a small amount of coconut oil or butter. Let it melt and coat the surface. You want the pan hot but not smoking—a drop of water should sizzle and evaporate immediately.
  5. Use a 1/4-cup measuring cup or a ladle to pour the batter onto the hot pan. Leave about 2 inches between each pancake so they have room to spread. Don’t overcrowd the pan.
  6. Let the pancakes cook undisturbed for 2-3 minutes. You’ll see small bubbles forming on the surface, and the edges will start to look set. This is your cue to flip.
  7. Slide your spatula under the pancake and flip it quickly. Cook for another 1-2 minutes on the second side, until it’s golden brown and cooked through. The pancakes should feel springy to the touch.
  8. Transfer the cooked pancakes to a plate and cover them with a clean kitchen towel or place them in a warm oven (200°F) while you cook the remaining batter.

Notes

Let the batter rest for 5 minutes after blending for fluffier pancakes. Use medium heat to avoid burning. Don’t press down on the pancakes while cooking. For a deeper chocolate flavor, add 1 teaspoon of instant espresso powder to the batter.
