  • 1 large apple (Honeycrisp, Fuji, or Granny Smith), peeled and grated
  • 1 teaspoon lemon juice
  • Pure maple syrup, for serving
  • Extra butter, for serving
  • Additional cinnamon, for dusting
  • Sliced fresh apple or toasted pecans, for serving (optional)

Instructions

  1. Peel and grate the apple using the large holes of a box grater. Toss with lemon juice in a small bowl and set aside.
  2. Add rolled oats to a blender or food processor and pulse 8-10 times until they resemble coarse flour. Pour into a large mixing bowl.
  3. Add all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, salt, and brown sugar to the oat flour. Whisk until evenly combined.
  4. In a separate bowl or liquid measuring cup, whisk together buttermilk, egg, melted butter, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined (a few lumps are fine). Fold in the grated apple and any juices.
  6. Let the batter rest for 5 minutes while the griddle heats up.
  7. Heat a non-stick skillet or griddle over medium heat. Add a pat of butter and let it melt, swirling to coat the surface.
  8. Using a ¼-cup measure, pour batter onto the hot griddle, leaving about 2 inches between pancakes. Cook until bubbles form on the surface and edges look set (2-3 minutes). Flip carefully and cook for another 1-2 minutes until golden brown and springy.
  9. Transfer cooked pancakes to a baking sheet in a 200°F oven to keep warm while cooking remaining batter.
  10. Serve immediately with warm maple syrup, a pat of butter, and a dusting of cinnamon. Add sliced fresh apple or toasted pecans if desired.

Notes

Don’t overmix the batter; lumps are fine. Let the batter rest for 5 minutes for fluffier pancakes. Grate the apple finely for best texture. Use room temperature ingredients. Flip pancakes only once. Wipe the pan between batches.
