  • 1 cup (200 grams) granulated sugar
  • 1 packet (about 0.14 oz / 4 grams) Kool-Aid powder (cherry, tropical punch, grape, or other flavors)
  • 1/4 teaspoon baking soda
  • 1/4 cup (60 ml) water
  • Pinch of salt

Instructions

  1. Heat 2 tablespoons (30 ml) of oil in a large pot over medium heat. Add the popcorn kernels, cover with a lid slightly ajar, and shake the pot occasionally. When popping slows to 2-3 seconds between pops (about 3-4 minutes), remove from heat and transfer popcorn to a large mixing bowl. Discard any unpopped kernels.
  2. In a medium saucepan, combine granulated sugar, Kool-Aid powder, water, and a pinch of salt. Stir over medium heat until sugar dissolves and the mixture reaches a light boil.
  3. Remove the saucepan from heat and quickly stir in baking soda. The mixture will bubble and foam.
  4. Immediately pour the hot syrup evenly over the popcorn. Using a wooden spoon, gently stir and toss the popcorn to coat thoroughly before the syrup hardens.
  5. Spread the coated popcorn onto a parchment-lined baking sheet in an even layer. Allow it to cool completely, about 20 minutes, until crisp.

Notes

Use fresh popcorn kernels and shake the pot while popping to prevent burning. Work quickly when coating popcorn with syrup as it hardens fast. If syrup hardens too soon, gently warm it to loosen. Cooling popcorn on parchment paper is key to crispness. For dairy-free, substitute butter with coconut oil or dairy-free margarine. Avoid microwave popcorn as it interferes with coating.
