Juicy grilled chicken skewers with caramelized peaches and a sweet-spicy glaze, perfect for summer cookouts or quick weeknight dinners.

Ingredients

Scale
  • ½ cup peach preserves
  • 3 tablespoons soy sauce (low-sodium if desired)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons packed brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1.5-inch cubes
  • 3 large ripe but firm peaches, each cut into 8 wedges
  • 1 medium red onion, cut into 1-inch chunks
  • Fresh cilantro for garnish (optional)
  • 810 wooden or metal skewers (soak wooden skewers in water for 30 minutes)

Instructions

  1. Make the marinade: In a medium bowl, whisk together peach preserves, soy sauce, olive oil, apple cider vinegar, brown sugar, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Set aside about ¼ cup for basting later.
  2. Marinate the chicken: Place cubed chicken thighs in a large bowl or zip-top bag. Pour remaining marinade over chicken and toss to coat. Cover and refrigerate for at least 30 minutes (2-4 hours is ideal, up to 6 hours max).
  3. Prep the fruit and veggies: Cut peaches into wedges (about 8 per peach) and red onion into 1-inch chunks. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Assemble the skewers: Thread chicken, peach wedges, and onion chunks onto skewers, alternating. Leave a little space between pieces for even cooking. You should get 8-10 skewers.
  5. Preheat the grill: Heat grill to medium-high (400°F-450°F). Clean and oil the grates well to prevent sticking.
  6. Grill the skewers: Place skewers on hot grill. Cook for 3-4 minutes per side, turning once, until chicken is cooked through (internal temperature 165°F) and peaches have grill marks. Total time: 8-10 minutes. During the last 2 minutes, brush reserved marinade over skewers.
  7. Rest and serve: Let skewers rest for 2-3 minutes. Sprinkle with fresh cilantro if desired and serve warm.

Notes

For best results, use ripe but firm peaches. Do not overcrowd skewers. Watch sugar content to prevent burning. Chicken thighs are recommended for juiciness. If using wooden skewers, soak them for at least 30 minutes to prevent burning.
