  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons brown sugar
  • ½ teaspoon chili flakes (optional)
  • 2 tablespoons toasted sesame seeds
  • 2 scallions, thinly sliced

Instructions

  1. Score the pork belly skin in a crisscross pattern about ½ inch apart using a sharp knife. (10 minutes)
  2. In a small bowl, whisk together soy sauce, honey, toasted sesame oil, rice vinegar, minced garlic, grated ginger, brown sugar, and chili flakes (optional). Taste and adjust sweetness or tang if needed. (5 minutes)
  3. Place the pork belly in a shallow dish or resealable bag and pour the marinade over. Massage to coat evenly. Marinate in the fridge for at least 30 minutes, up to 2 hours for deeper flavor. (30–120 minutes)
  4. Heat a heavy-bottomed skillet over medium-high heat. Sear the pork belly skin-side down for 5–7 minutes until golden and crisp. Flip and sear the other side for 3–4 minutes. (10 minutes)
  5. Pour the remaining marinade into the skillet. Reduce heat to medium-low and cook the pork in the sauce, spooning glaze over the meat, for 15–20 minutes until tender and sauce thickens to a sticky consistency. (20 minutes)
  6. Sprinkle with toasted sesame seeds and sliced scallions before serving hot. (2 minutes)

Notes

Score the pork skin carefully to help render fat and crisp the skin. Keep heat moderate during searing to avoid burning the glaze. Reserve some marinade before adding pork to baste during cooking. Let pork rest 5 minutes after cooking for juiciness. For extra crispiness, finish under broiler for a few minutes watching closely. Add splash of water if sauce thickens too much or burns.
