  • 1 whole chicken (about 45 pounds / 1.82.3 kg)
  • 3 medium fresh pears (Bartlett or Bosc, firm but ripe)
  • 6 slices thick-cut bacon
  • 3 tablespoons honey (raw or wildflower)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.
  3. Rub the entire chicken with 1 tablespoon olive oil, then season inside and out with salt, pepper, minced garlic, chopped thyme, and smoked paprika if using.
  4. Truss the chicken by tying the legs together with kitchen twine and tucking the wing tips under the body.
  5. Core and quarter the pears, leaving the skin on. Cut the bacon slices in half.
  6. Toss the pears and bacon pieces in a bowl with the remaining 1 tablespoon olive oil, honey, lemon juice, and a pinch of salt.
  7. Place the seasoned chicken breast-side up in the center of a roasting pan or oven-safe skillet.
  8. Scatter the honey bacon pears around the chicken, ensuring some bacon pieces lay on top of pear quarters.
  9. Roast for 50-60 minutes, or until the chickenโ€™s internal temperature reaches 165ยฐF (74ยฐC) at the thickest part of the thigh. Halfway through, baste the chicken and pears with pan juices.
  10. Remove from oven and let the chicken rest for 10-15 minutes before carving.
  11. Serve the carved chicken with a generous serving of honey bacon pears and spoon pan juices over the top.

Notes

Pat the chicken dry to ensure crispy skin. Baste halfway through roasting to keep the chicken moist. Use a meat thermometer to check for doneness at 165ยฐF (74ยฐC). Tent with foil if pears brown too quickly. Let chicken rest before carving. Broil for 2-3 minutes at the end for extra crispy skin if desired.
