A fresh and easy panini combining sweet blueberries, aromatic basil, and creamy goat cheese on crispy, buttery bread. Perfect for a quick lunch or light dinner that surprises your taste buds.

  • 2 slices rustic sourdough or ciabatta bread
  • 3 ounces (85 g) creamy goat cheese, softened
  • 1/3 cup (about 50 g) fresh blueberries, rinsed and patted dry
  • 68 fresh basil leaves, whole or roughly chopped
  • 1 tablespoon (15 g) unsalted butter, softened
  • 1 teaspoon honey (optional)
  • Pinch of freshly ground black pepper
  • Lemon zest from half a lemon (optional)

Instructions

  1. In a small bowl, gently toss blueberries with honey and a tiny pinch of lemon zest if using. Set aside for 5 minutes.
  2. Spread softened goat cheese evenly over one side of each bread slice.
  3. Layer fresh basil leaves on top of the goat cheese on one slice, then spoon the honeyed blueberries evenly over the basil. Sprinkle with black pepper.
  4. Place the second slice of bread cheese-side down on top of the blueberries and basil to form a sandwich.
  5. Spread softened butter evenly on the outside of both slices of bread.
  6. Heat a non-stick skillet or grill pan over medium heat. Place the sandwich in the pan and press down gently with a spatula. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt.
  7. Carefully flip the sandwich and cook the other side for another 3-4 minutes until golden and crispy and the goat cheese has melted fully. Lower heat if bread browns too fast.
  8. Remove the panini from the skillet and let it rest for 1-2 minutes. Slice diagonally and serve immediately.

Notes

Use softened goat cheese for easy spreading and melting. Avoid soft sandwich bread to prevent sogginess; crusty sourdough or ciabatta works best. If using frozen blueberries, thaw and pat dry thoroughly. Butter the bread exterior for a golden, crispy crust. Cook gently to avoid squishing the berries. Let the panini rest briefly before slicing to retain juicy blueberry flavor.
