  • 1 cup (100g) shredded mozzarella cheese
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • Freshly cracked black pepper, to taste
  • 1 teaspoon honey (optional, for drizzling after baking)

Instructions

  1. Cook 6 thick-cut bacon slices in a skillet over medium heat until crispy, about 7-9 minutes, flipping occasionally. Drain on paper towels and cool. Break into bite-sized pieces.
  2. Preheat oven to 450°F (232°C). Place pizza stone in oven if using.
  3. Roll out 12-ounce pizza dough on a lightly floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet or a pizza peel dusted with cornmeal if using a stone.
  4. Brush edges of dough lightly with 1 tablespoon olive oil.
  5. Evenly sprinkle 1 cup shredded mozzarella over dough, leaving a small border. Scatter 4 ounces crumbled blue cheese on top.
  6. Bake pizza for 10-12 minutes until crust is golden and cheese is bubbly.
  7. Remove pizza from oven. Arrange thin apple slices evenly over cheese. Scatter crispy bacon pieces on top.
