  • 1 pound fresh green beans, trimmed
  • 3 tablespoons olive oil, divided

  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Trim green beans and pat chicken thighs dry. Season chicken with salt and pepper.
  2. In a small bowl, whisk together minced garlic, soy sauce, honey, sesame oil, rice vinegar, ginger, and red pepper flakes. Set aside 2 tablespoons of glaze for later.
  3. Drizzle 2 tablespoons olive oil onto a sheet pan or cast iron skillet. Place chicken thighs in the center. Toss green beans with remaining 1 tablespoon olive oil and a pinch of salt, then arrange around the chicken in a single layer.
  4. Brush chicken generously with the garlic soy glaze (reserve the rest). Roast for 12 minutes.
  5. Remove pan from oven. Flip chicken and toss green beans. Brush the other side of chicken with more glaze. Return to oven for 10-12 minutes, until chicken reaches 165°F (74°C) and green beans are tender-crisp.
  6. Brush chicken one last time with remaining glaze. Let rest on the pan for 5 minutes.
  7. Sprinkle with sesame seeds if desired. Serve chicken and green beans with pan juices drizzled on top. Enjoy over steamed rice or quinoa.

Notes

For best results, don’t pour all the glaze on at once; layer it throughout cooking to caramelize. Let the chicken rest before cutting to keep juices in. If using chicken breasts, start checking doneness at 18 minutes. For thicker green beans, blanch for 2 minutes before roasting. Line pan with parchment for easy cleanup.
