This Easy Pumpkin Spice Latte Bark Bliss is a creamy, crunchy, no-bake fall treat that tastes just like a pumpkin spice latte in solid form. Made with white chocolate, pumpkin puree, and warm spices, it comes together in under 10 minutes of active work.

  • 12 ounces white chocolate chips or chopped white chocolate
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon coconut oil or vegetable shortening
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon instant espresso powder or instant coffee granules
  • 1/4 teaspoon salt
  • 1/4 cup white chocolate chips (for topping)
  • 1 tablespoon crushed graham crackers or Biscoff cookies
  • 1/2 teaspoon pumpkin pie spice (for sprinkling)
  • Optional: 1 tablespoon chopped pecans or pepitas

Instructions

  1. Line your baking sheet or 8×8 pan with parchment paper, letting it hang over the edges.
  2. Place 12 ounces of white chocolate chips and 1 tablespoon of coconut oil in a medium microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring well after each interval, until mostly melted and smooth.
  3. Add the pumpkin puree, pumpkin pie spice, cinnamon, instant espresso powder, and salt to the melted chocolate. Stir vigorously until completely combined and smooth.
  4. Pour the mixture onto the prepared parchment-lined pan. Use a spatula to spread it into an even layer, about 1/4 inch thick.
  5. Melt the remaining 1/4 cup of white chocolate chips in the microwave in 20-second intervals or using a double boiler. Transfer to a small piping bag or zip-top bag with the corner snipped off. Drizzle over the bark in a zigzag pattern.
  6. Immediately sprinkle the crushed graham crackers or Biscoff cookies, extra pumpkin pie spice, and optional nuts or seeds over the top. Press them in gently.
  7. Place the pan in the refrigerator and chill for at least 30 minutes, or until completely firm.
  8. Once firm, lift the bark out using the parchment paper overhang. Break it into irregular pieces with your hands.

Notes

Blot pumpkin puree with a paper towel to remove excess moisture for a firmer bark. Use room temperature ingredients. Do not overheat white chocolate. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
