  • ¼ tsp baking soda
  • ½ cup mini chocolate chips (optional, 90 g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. In a large bowl, combine 1 ½ cups rolled oats, 1 cup shredded coconut, ½ cup almond flour, ¼ tsp salt, and ¼ tsp baking soda. Stir gently to distribute evenly.
  3. In a separate small bowl, whisk together ⅓ cup honey, ¼ cup melted butter, and 1 tsp vanilla extract until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients. Stir thoroughly using a spatula or wooden spoon until everything is evenly coated and starts to stick together. Fold in ½ cup mini chocolate chips if using.
  5. Using a tablespoon or small cookie scoop, drop rounded spoonfuls onto the prepared baking sheet, spacing about 1 inch apart. Lightly press down each mound to flatten slightly, aiming for about 1-inch diameter bites.
