Easy Homemade Strawberry Gummy Bears

A simple and fun recipe to make soft, chewy strawberry gummy bears at home using fresh strawberries, gelatin, and natural sweeteners. Perfect for a nostalgic treat or party favors.

  • 1 cup fresh strawberries, hulled and chopped
  • 3 tablespoons gelatin powder
  • 1/2 cup cold water (120 ml)
  • 2 tablespoons honey or granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon natural strawberry extract (optional)

Instructions

  1. Rinse and hull about 1 cup of fresh strawberries. Chop roughly and blend until smooth. Strain through a fine mesh sieve if a silky texture is desired. Set aside.
  2. Pour 1/2 cup cold water into a small bowl. Sprinkle 3 tablespoons gelatin evenly over the surface. Let sit undisturbed for 5 minutes to bloom.
  3. Transfer bloomed gelatin to a small saucepan over low heat. Stir constantly until gelatin dissolves completely without boiling.
  4. Add 2 tablespoons honey or sugar and 1 tablespoon fresh lemon juice to the saucepan. Stir until smooth and combined.
  5. Remove from heat and stir in the strained strawberry puree and 1/2 teaspoon strawberry extract if using. Mix gently but thoroughly.
  6. Pour mixture into silicone gummy bear molds. Refrigerate for at least 30 minutes until gummies are firm.
  7. Gently pop gummies out of molds and store in an airtight container.

Notes

Bloom gelatin in cold water to avoid gritty texture. Melt gelatin over low heat without boiling to prevent rubbery gummies. Strain strawberry puree for smoother texture. Keep mixture warm for easy pouring. For vegan version, substitute gelatin with agar-agar powder (about 2 teaspoons) but expect firmer texture. Store gummies in airtight container in fridge up to two weeks or freeze for longer storage.
