Ingredients

Scale
  • 1 ½ cups warm water (about 110°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 tablespoon granulated sugar
  • 3 ½ cups all-purpose flour (plus more for dusting)
  • 1 teaspoon fine sea salt or table salt
  • 2 tablespoons unsalted butter (melted)
  • 8 cups water (for baking soda bath)
  • ⅓ cup baking soda
  • 1 tablespoon brown sugar (optional, for color)
  • 8 high-quality all-beef hot dogs
  • 1 large egg (beaten with 1 tablespoon water for egg wash)
  • 3 tablespoons unsalted butter (melted, for brushing)
  • Flaky sea salt (for topping)

Instructions

  1. Activate the yeast: In the bowl of a stand mixer, combine warm water, sugar, and yeast. Stir gently and let sit for 5-7 minutes until foamy and bubbly.
  2. Make the dough: Add flour and salt to the yeast mixture. Mix on low speed with the dough hook until a shaggy dough forms. Add melted butter and continue kneading on medium-low for 5-6 minutes until smooth, elastic, and slightly tacky.
  3. First rise: Shape dough into a ball and place in a lightly oiled bowl. Cover with a clean kitchen towel and let rise in a warm spot for 20 minutes until slightly puffed.
  4. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring 8 cups of water to a boil in a large pot.
  5. Divide and shape: Turn risen dough onto a lightly floured surface. Divide into 8 equal pieces (about 80-85 grams each). Roll each piece into a 20-inch long rope.
  6. Wrap the hot dogs: Wrap each rope around a hot dog, starting at one end and working to the other. Tuck ends under the hot dog to secure. Place on prepared baking sheet.
  7. The baking soda bath: Add baking soda and brown sugar (if using) to boiling water. Reduce heat to a gentle simmer. Using a slotted spoon, carefully lower 1-2 pretzel dogs into the water for exactly 30 seconds, flipping halfway through.
  8. Drain and place: Remove pretzel dogs from water, letting excess drip off. Place back on parchment-lined baking sheet, spacing 2 inches apart.
  9. Egg wash and bake: Brush each pretzel dog generously with egg wash. Bake for 12-15 minutes until deeply golden brown and slightly darker than you think they should be.
  10. Butter and salt: As soon as they come out of the oven, brush with melted butter. Sprinkle generously with flaky sea salt while butter is hot. Let cool 5 minutes, then brush with more melted butter just before serving.

Notes

Don’t skip the baking soda bath—it’s essential for the signature pretzel crust. For best results, use all-beef hot dogs and flaky sea salt. The double butter application (once after baking and once before serving) creates a glossy, buttery finish. These are best served within 30 minutes of baking.
