  • 1 teaspoon sugar
  • Salt to taste
  • Optional: ½ teaspoon smoked paprika

Instructions

  1. Slice the onions thinly, about 1/8-inch (3 mm) slices.
  2. Heat 1 cup (240 ml) vegetable oil in a large heavy-bottomed skillet over medium heat until it reaches about 325°F (160°C).
  3. Fry the onions in batches, spreading them evenly in the hot oil. Fry for 8-10 minutes, stirring gently until golden brown and crispy.
  4. Remove the onions with a slotted spoon and drain on paper towels or a wire rack. Sprinkle lightly with salt while still hot. Repeat until all onions are fried.
  5. In a mixing bowl, combine minced garlic, chili flakes, soy sauce, sugar, and smoked paprika (if using). Stir until sugar dissolves.
  6. Add the cooled fried onions to the bowl and gently toss to coat evenly with the chili mixture.
  7. Let the mixture cool completely, then store in an airtight glass jar in the refrigerator for up to 2 weeks.
