A quick, no-cook summer salad made with ripe tomatoes, saltine crackers, and a creamy dressing. Perfect for potlucks, barbecues, or a light meal when you need something delicious in minutes.

  • 1 sleeve saltine crackers (about 40 crackers)
  • 1/2 medium red onion, thinly sliced
  • 1/2 English cucumber, diced
  • 1/3 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt (plus more for tomatoes)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh herbs (parsley, chives, or dill), chopped (optional)

Instructions

  1. Wash and dice tomatoes into 1/2-inch chunks. Dice cucumber the same size. Thinly slice red onion into half-rings. Chop fresh herbs if using.
  2. Optional: Place chopped tomatoes in a colander, sprinkle with a pinch of salt, and let sit for 5 minutes to draw out excess liquid.
  3. In a large mixing bowl, whisk together mayonnaise, apple cider vinegar, 1/4 teaspoon salt, and black pepper until smooth.
  4. Add diced tomatoes, cucumber, sliced red onion, and fresh herbs to the bowl. Gently stir to coat vegetables evenly with dressing.
  5. Crush saltine crackers gently in your hands over the bowl, aiming for pea-sized pieces. Fold crackers into the salad gently until evenly distributed.
  6. Cover the bowl with plastic wrap or a lid and let rest at room temperature for at least 10 minutes to allow crackers to absorb dressing and tomato juices.
  7. Taste and adjust seasoning with additional salt, vinegar, or pepper as needed.
  8. Serve immediately or within an hour for best texture. Garnish with extra herbs or black pepper if desired.

Notes

Don’t over-crush the crackers; leave some texture. Serve within 15-20 minutes of adding crackers for a slight crunch. For a creamier salad, add extra mayonnaise. To make it a meal, add shredded chicken, tuna, or crumbled bacon. Store leftovers in the refrigerator for up to 2 days; texture will soften.
