A crispy, cheesy cauliflower crust replaces traditional bread in this healthier twist on a classic grilled cheese sandwich. Ready in under 30 minutes, it’s a crowd-pleasing comfort food that sneaks in a serving of vegetables.

  • 1/2 cup shredded mozzarella cheese

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano (optional)
  • 8 slices of your favorite bread (sourdough, whole wheat, or gluten-free)
  • 4 slices of cheese (cheddar, provolone, gouda, or a combination)
  • 2 tablespoons butter or olive oil

Instructions

  1. Prepare the cauliflower: Remove the leaves and core from the cauliflower and cut it into small florets. You should have about 4 cups of florets. Working in batches if needed, pulse the florets in a food processor until they resemble rice or coarse crumbs. Do not over-process, or you will end up with a paste.
  2. Squeeze out the moisture: This is the most important step. Transfer the riced cauliflower to a clean kitchen towel or cheesecloth. Gather the corners and twist tightly over the sink, squeezing out as much liquid as you can. You will be shocked at how much water comes out. Keep squeezing until no more liquid drips out. This step is non-negotiable.
  3. Microwave the cauliflower: Place the squeezed cauliflower in a microwave-safe bowl and microwave on high for 3 minutes. This helps soften the cauliflower and release even more moisture. Let it cool slightly, then squeeze it again in the towel to remove any additional liquid.
  4. Make the crust mixture: In a large mixing bowl, combine the squeezed cauliflower, beaten egg, shredded mozzarella, grated Parmesan, garlic powder, onion powder, salt, pepper, and oregano if using. Mix well until everything is evenly combined. The mixture should be moist but not wet, and it should hold together when pressed between your fingers.
  5. Form the crust: Divide the cauliflower mixture into 4 equal portions. On a piece of parchment paper or a clean surface, press each portion into a thin, flat patty that is roughly the same size as your bread slices. You want it to be about 1/4 inch thickโ€”not too thick, or it won’t cook through properly.
  6. Pre-cook the crust: Heat a non-stick skillet over medium heat and add a little butter or oil. Carefully transfer one cauliflower patty to the skillet and cook for 3-4 minutes per side, until golden brown and crispy. Repeat with the remaining patties. Set them aside on a plate.
  7. Assemble the sandwiches: Take two slices of bread. Place a slice of cheese on one piece of bread, then top with a cooked cauliflower patty. Add another slice of cheese on top of the patty, then close the sandwich with the second slice of bread. Press down gently to help everything stick together.
  8. Cook the sandwiches: Wipe out the skillet and add a fresh pat of butter or drizzle of oil. Place the assembled sandwich in the skillet and cook over medium heat for 3-4 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted. Use a spatula to press down gently on the sandwich as it cooksโ€”this helps the crust adhere to the bread.
  9. Rest and serve: Remove the sandwich from the skillet and let it rest for 1-2 minutes before cutting. This allows the cheese to set slightly and prevents it from oozing out everywhere when you cut into it. Slice diagonally and serve immediately.

Do not skip the double squeeze of the cauliflower to remove moistureโ€”this is key for a crispy crust. Use medium heat to avoid burning the crust before the cheese melts. Let the crust patties cool slightly before assembling to prevent soggy bread. Press down gently while cooking to help the crust adhere. If cheese isn’t fully melted, cover the skillet with a lid for the last minute. The cauliflower mixture can be made ahead and stored in the fridge for up to 3 days.
